Ingredients

  • 1½ cups

    flour

  • 1 Tbsp

    Monk fruit sweetener

  • 1 Tbsp

    baking soda

  • ¼ tsp

    salt

  • 1 tsp

    Xanthan gum

  • Pinch

    of cinnamon

  • 2½ cups

    milk or half and half

  • 1 tsp

    vanilla

  • 1 Tbsp

    lemon juice

  • 1 Tbsp

    oil

  • 6 Tbsp

    cocoa powder

    optional, for chocolate pancakes

    )
Makes: 15 pancakes

Steps

  1. In a large bowl, mix the dry ingredients thoroughly.

  2. Add the wet ingredients, leaving the lemon juice last to activate the baking soda.

  3. Mix and let sit for a few minutes to thicken.
